Enzymatic Analysis

Enzymatic analysis is one of the most accurate and reliable methods used in wine laboratories to analyze key parameters such as glucose/fructose, organic acids, PH, SO2 and many other important components of wine. This technology is based on specific enzyme-driven reactions, where each compound is selectively transformed into a measurable product- typically detected through a simple spectrophotometric reading. Because each test is designed for a single compound, this method offers a high level of precision and avoids the many interferences that can occur due to the wine’s natural complexity of components.

Understanding the Technology

Enzymatic analysis offers direct, specific measurement of key wine parameters through dedicated enzyme reactions, providing the level of precision and reliability that many critical winemaking decisions require. Each parameter is measured using a specific enzyme that reacts only with the compound of interest, with the result read by Spectrophotometry. This promises the highest degree of precision and consistency.
Spectroscopic systems on the other hand analyze the overall spectral profile of the wine and use calibration models to estimate multiple parameters at once. These systems are fast and efficient; however, their accuracy depends on the quality of the calibration and on how closely the sample matches the reference data.
