LAFFORT R&D studies conducted since 2023 have demonstrated that using SUPERSTART® during the rehydration of ZYMAFLORE® yeasts enables efficient rehydration at 20°C in just 15 minutes, without compromising fermentation kinetics or aromatic expression compared with the traditional rehydration protocol at 37°C.

Based on these findings, all ZYMAFLORE® yeast strains can now be safely and effectively rehydrated at 20°C for only 15 minutes when used in combination with SUPERSTART®.
